Premium Sake -Tokutei Meishu
The first criteria for the selection of our sake are that it is sake that we ourselves are interested in, and which we want to drink ourselves. It is important that our sake complement food well, so it can offer the most flexibility and be enjoyed as it traditionally does in the home country, always together with food. We choose sake that can be drunk both gently warmed and chilled which is one of the unique joys of sake, the discovery of a new taste profile at temperature change. We import directly from breweries in Japan and therefore have access to a great knowledge of our sake which we are happy to convey. Through our work we will also be able to express the ideals of the breweries to create the best imaginable sake. Our ambition is to create a precise and interesting portfolio of producers from different regions of Japan that will shed light on the incredible diversity and innovation that exists within the magnificent sake culture of Japan.
A Sake Odyssey
Our work is based on a deep fascination for sake and Japanese food culture. We collaborate with a specially selected brewery which we have admired for many years. Sake from Sohomare is characterized by a uniquely balanced taste. The profile is clean and elegant all the way through, qualities to assure that you never get tired of drinking their sake. Like Sohomares graphical and visual expression, the experience of their sake can be described as aesthetic. It is our ambition to hit the Nordic taste palette with this delicate sake that creates a precise and exciting dynamic along with our food culture. The brewery's famous variants Kimoto and Karakuchi are sake on the dry side, where delicate fruit notes are complemented by an uplifting, rich acidity. Soft water sourced from the well beneath the brewery in Tochigi provides a pleasant silk-like consistency, as it is felt in the mouth nip after nip.
